When The Going Gets Tough, The Tough Get Cooking!

This week is all about comfort food – food that is economical, easy to make, and above all else, heart-warming.

Tuna Mornay (Serves 4)

Ingredients
1 tbsp. olive oil
1 onion, diced
2 tbsp. plain flour
500mls milk
200gms grated cheese
Salt and pepper to taste
400gm tin of tuna
½ bunch parsley, finely chopped
1½ cups cooked rice or noodles

Method
• Gently fry the onion in the olive oil.
• Add the flour and stir to make a roux.
• Add the milk and use a wire whisk to ensure that all flour is incorporated evenly without lumps.
• As the milk starts to come to a boil add the cheese and seasonings and stir with a wooden spoon to fully incorporate.
• Drain the tin of tuna and add to the cheese sauce, along with the chopped parsley and cooked rice/noodles. Stir through and serve.

This dish is also delicious when the parsley is swapped with a tin of drained sweetcorn or a cup of cooked peas.

Apple Crumble (Serves 4)

Ingredients
4 large Granny Smith apples
1 pinch cinnamon
2 tbsp. water
1½ cups plain flour
¾ cup brown sugar
4 tbsp. rolled oats
125gms soft butter

Method
• Peel the apples and stew them in a large saucepan with the cinnamon and water until they are just soft. Put the stewed apples into a greased pyrex dish/baking dish.
• Place the flour, sugar and rolled oats into a large mixing bowl, and stir.
• To make the crumble, add butter and rub through the dry ingredients as if making pastry.
• Sprinkle the crumble onto the stewed apple.
• Bake at 160o (fan forced oven) for approximately 20 minutes or until crumble has browned on the top.

Serve with ice-cream and cream.
